I use fresh yeast (I buy 500g at a time and cut into 25-30 pieces, wrap in cling film and then freeze to use when needed). I mix the dough in the evening (I only knead it enough to make it smooth - usually only a couple of minutes) and then leave overnight. In the morning I knead it again for a couple of minutes and then divide into 16 pieces. I grill these for about 5-6 minutes a side at 190 degrees Centigrade. Cooking times and temperature may vary with different grills/ovens. I then freeze the flat breads and we just defrost what we need each day.
